Posted by admin on September 21st, 2011 and filed under japanese cooking | 6 Comments »

I like to make Japanese dishes, but i’ve still not made any with raw egg. I would think its safe, an entire nation can’t be to wrong on it

Speaking only from personal experience, I have never found it to be a problem. You have to be really unlucky to get a food borne illness from raw egg, especially since usually in japanese food you are putting it over something hot that cooks it at least a tiny bit.

Cooking: What type and how most Japanese restaurants cook their rice?

Posted by admin on September 1st, 2011 and filed under japanese restaurants | 2 Comments »

I like the way they cook rice which is sticky but I am not sure what kind of rice they use and the procedure they do. The rice that I eat, has an aromatic smell but kinda soft than the regular Japanese rice.

They use a special kind of rice called short grain rice. It’s much stickier and starchier. Atleast this is what they use to make sushi. Cooking it can be a bit of a hassle, and takes some patience. After, they add a vinegar mixture to give it that sour taste. I saw a good episode of good eats that explained how to make sushi, and how to correctly prepare the rice. I’ll give you the link. Hope this helps ^_^
