I was at one of those hibachi places over the weekend and the chef was cooking some meat in front of us and slipped in a huge slice of butter into the frying meat and stirred it around in there. I didn’t know that butter was used in Japanese cuisine.

sauteed spinach with butter is very popular.
it’s not usually used for traditional japanese cuisine but our culinary customs are westernized very much. it’s not that we eat traditional food every day.
by the way hibachi places are not so common.

i have never heard of japanese using butter either. were you actually in japan?

little to no dairy is used in Asian cooking, Japanese included.

It’s not. But then again, Hibachi Steak Houses aren’t Japanese. They were invented in America.
Other Asian countries do use butter to cook their steaks – they got that from the British. Of course they also made some adjustments to the sauces and marinades used. Such things happen all the time when cultures collide, and start exchanging food.

Are you absolutely sure it was butter? When I was in Japan, they used a piece of beef fat to grease the pan for sukiyaki.

Very little. I cook Japanese and I only use for pans, but most of the time I use oil for the pans. The butter sometimes gives a nicer taste but I know that the Japanese barely use any butter in their cooking.
