  • What kind of dressing do they use in the salad they give you with the bentos in Japanese restaurants?

    You know how when you order bentos in Japanese restaurants, they give you rice, entrees, miso soup and salad? What is that dressing they use in the salad? I’m in love with that stuff but can’t figure out what it is.

    It’s Miso dressing :o )

    * 1/4 cup miso
    * 2 tbsp rice vinegar
    * 2 tbsp soy sauce
    * 2 tbsp sesame oil
    * 1/2 tsp minced fresh ginger OR 1 tsp ginger powder
    * water as needed (optional)

    Combine all ingredients using a blender or food processor. Or whisk smooth

    Add a bit of water, a teaspoon at a time, if desired, for a thinner consistency.

      The Japanese restaurant that we frequent gives you a choice of sesame or ginger. The ginger is kind of pink and spicy. The sesame is creamier, and has a milder flavor. I’ve been unable to find either one in regular grocery stores, but I’ll bet you could find something close at an Asian supermarket.

      It’s probably ginger– the kind I usually get is sort of orange and bumpy in texture. You can find it in an asian supermarket.

      It is usually made with rice wine vinegar with some sugar and ginger added to it.

      It’s called "chukka" dressing, which literally means "Chinese" dressing. It’s virtually the only dressing you’ll find anywhere in Japan. After returning from Japan, I was in withdrawal for the stuff. It’s available where I live now, but very expensive, so I learned to make my own! I mix mine in a specific container, and I know just how much of the ingredients to add, so my recipe is approximate. Experiment until it tastes right!

      1 part Chinese black vinegar
      (or balsamic vinegar)

      1 part soy sauce

      4 parts salad oil

      also add powdered ginger, sesame oil, sesame seeds, a little at a time, until it tastes the way you want. Shake it well before putting it on your salad.

      Oh I love that stuff to but I still havn’t found a recipe close to as good as what they actually serve. I would try to maybe find a speciality store that might have it.
